Idichakka, or tender jackfruit, is a highly prized, young Kerala vegetable with a soft, fibrous texture and mild flavor used primarily for making traditional stir-fries (thoran) and curries. It is distinct from raw, mature jackfruit, as its seeds are still soft and the fruit is small and tender. The edible part is often pounded, resulting in a unique, shredded texture that absorbs spices.
