The soft inner part of the stem is used as food and also has many medicinal properties. The outer hard layers of the stem are peeled away, and only the soft inner core is used. The banana stem is cut into small pieces and soaked in buttermilk or diluted yogurt for half an hour. In South India, it is cooked as a vegetable and eaten with rice.
